The Campera salad, is a very healthy recipe, nutritious, fresh and with a spectacular taste, made with products from the garden such as potato, pepper, cucumber, tomato and you can vary it with different products to give it diversity, color and a lot of flavor.
Ingredients (2 people):
2 large potatoes
2 eggs
2 tomatoes
1 small onion
1 green and red pepper
1 cucumber (can add apple, pineapple, watermelon or melon)
olives 6 per person
1 tin of tuna 140gr
extra virgin olive oil
vinegar of wine or apple
Salt
parsley and chives (optional)
Elaboration:
Put the potatoes to cook for 30 minutes and eggs 20 minutes.
After that time, remove from the heat and put to cool, both the potatoes and eggs.
Wash the peppers, the tomatoes and cut them well, chop the cucumber or apple what you are using, cut the onion and the little parsley
Put everything in a bowl and add the olives and canned tuna.
Chop the egg and potatoes and add them too.
Make a vinaigrette-like emulsion with olive oil, vinegar, chopped parsley, salt and a few drops of the broth from the olives. You can put everything in a jar with a lid and shake it well.
Add it over the Campera salad mix well and serve, you can take it to the refrigerator and eat it cold.
