The coconut cake is a sweet with an exotic flavor, with a glaze that confers it, personality and unique flavor, it is a soft and moist cake, perfect for an aperitif and suitable for the whole family, easy to prepare and very delicious.
ingredients:
280 grams of wheat flour = 2 cups
220 gr of sugar = 1 cup
100gr of grated coconut = 1 cup
grated skin of 1 lemon
3 medium eggs
125 ml of sunflower oil = 1/2 cup
200 ml of coconut milk = 1 cup - 2 tablespoons
1 tablespoon baking powder.
1 mold of central orifice of 22 cm of diameter and 8 of height greased and floured.
Glazed:
130 gr of powdered sugar = 1 cup
3 heaping tablespoons of coconut milk
1 pinch of salt.
A bit of grated coconut to sprinkle over the icing.
preparation:
Mix the flour with the baking powder and sift, reserve.
Turn the oven to 180ºc so that it heats up.
Beat the eggs until making a cream add the sugar and the lemon zest.
Add the grated coconut, the coconut milk, the oil and finally the sifted flour, always with the blender on.
Place the mixture in the mold and take it to the oven at 180ºc for about 40 or 45 minutes.
Preparation of the glaze:
To the powdered sugar add the salt, mix and add the 3 tablespoons of milk powder, mix well to make a thick cream, sprinkle over the sponge cake and sprinkle grated coconut.
