Today we are going to cook the easiest and richest cheese cake in the world, the same as always, the one that our grandmothers made and that has run from generation to generation, which is incredibly delicious and is super easy to make.
Ingredients for a mold of 20 cm in diameter by 6 cm high lined with oven paper.
500 gr of cream cheese
400 ml of liquid cream or milk cream
4 eggs
220 gr of sugar = 1 cup
40 gr of flour (can be substituted by rice flour). = 2 tablespoons
preparation:
Turn on the oven at 200ºc
We remove the ingredients from the refrigerator 1 hour before so they are at room temperature and integrate better and start with the dough. The first thing is to beat the eggs with the sugar, until making a very thick cream, then add the cheese and continue beating until it has integrated well and make a homogeneous mass. We add the sifted flour and continue beating to make a smooth dough
If we wet the paper and squeeze it well, it will soften and can adapt to the mold much better. It's a trick that María Dolores has taught us and we've already stayed.
Carefully mix the mixture, mashing the dough well.
We introduce in the preheated oven to 200º. Heat up and down,
After 15 minutes, we lower the temperature to 180º and leave another 35 minutes. Finally, 10 minutes more at the same temperature but with air, so that it browns well.
You'll see that it inflates a lot, it's normal, then it goes down. Also do not be scared if it cracks.
After 2 hours it is already cold and can be unmold, remove it from the mold pulling the paper and carefully separate it from the paper, then turn it over and remove the paper from the bottom and place it on the plate.
